Today was the last day of kindergarten for Izzy! I can’t believe it’s been a whole school year already and that she will be a first grader in a few short months. It’s so fun to see the girl she is becoming and the things she takes interest in.
As promised she got to choose the lunch for today. She went back and forth between peanut butter in lettuce or in a wrap and finally settled on peanut butter and jelly (homemade blueberry jam) in a wrap. The rest of her specifications were carrots and apples. I added cucumbers and golden beets (they both went crazy for the beets!!). I can’t believe I got off so easy again. They must have forgotten about chicken nuggets and Arthur Macaroni (previously coveted items).
Even though Izzy had both cupcakes and donuts for snack at school I wanted to make them something special for snack. Cookies sure are special. And carrots never hurt. =)
These are Trail Mix Cookies adapted to not include the oatmeal. These cookies are packed with coconut, almonds, peanuts, peanut butter, sunflower seeds, pumpkin seeds, and chia seeds. No eggs, milk, or butter in these cookies either! Sweetened with honey and mini chocolate chips, these cookies are amazing!
To top off the day we gave the girls their end of school year gifts. We give them some fun stuff to use over the summer. This year they got markers, a princess notebook and the rest was all about their new obsession, Frozen. We now own the movie, they got some small figurines, and a Frozen coloring and activity book. They were so so happy! Frozen songs have been ringing through our house from both girls and I’m unsure whether owning the movie will make it better or worse. At least they are happy and the songs are stuck in my head anyway so I won’t complain.
